Cannelloni Ménage à Trois

Tomato sauce: tomato purée, tomato paste, diced tomatoes, whole italian tomatoes, sherry wine, vodka, vegetable stock, onion, garlic, italian herb seasoning, red pepper flakes, sea salt, and pepper.

Filling #1: sweet potatoes, butternut squash, onion, lemon zest, lemon juice, vegetable stock, pepper, sea salt, brown sugar, ricotta cheese, and an egg yolk.

Filling #2: ricotta cheese, egg yolk, mozarella cheese, parmeggiano reggiano, parsley, sea salt, and pepper.

Filling #3: mushrooms sautéed in butter, spinach, garlic, onion, sea salt, pepper, egg yolk, ricotta, parmeggiano reggiano, nutmeg.

Béchamel sauce: organic flour, Earth Balance, grapeseed oil, 2% milk, nutmeg, sea salt, and pepper.
